I found Make-Ahead Meals for Busy Moms full of easy to prepare and kid-friendly dishes. I tested the Chicken Stroganoff recipe which was easy to follow, tasty, and well received! The baking/dessert section is another rich resource with recipes for Coffee Cake with Apple Pie Filling, Cranberry Lemon Cake, Lemonade Cake, Cherry Bars and Tiramisu. I'd recommend this cook book to someone looking for straightforward and kid friendly recipes.
